Hi everyone. It has been a slow blog week. We just really haven't been up to much this week...Michael's been busy with school and work. The girls and I have been busy playing outside. We did join the Y this week so that is exciting. I can drop both of the girls off in their daycare while I work out. They love playing with all of the toys and other kids. In a few weeks Gracie will be starting swim class so we are looking forward to that.
Our menu for the week isn't very exciting, but it is going to be pretty cheap because it is built around the sales and coupons I have. Check out the OrgJunkie's blog for lots more recipes and meal plans. OrgJunkie's link is in the sidebar. So without further ado...
Monday:
B: Oatmeal with Blueberries
L: PB&J, Cheese, and Oranges
D: Toast, Eggs with Ham, and Fresh Fruit
Tuesday:
B: Cold Cereal with Fresh Fruit
L: Grilled Cheese, Chicken Noodle Soup
D: Italian Chicken Pastina (recipe below), Broccoli, Carrots
Wednesday:
B: Toast, Scrambled Eggs, Fresh Fruit
L: English Muffin Pizza with Ham, Mixed Vegetables
D: Taco Soup
Thursday:
B: Oatmeal with Blueberries
L: Leftover Taco Soup
D: Pork Tenderloin (recipe below), Wild Rice, Carrots
Friday:
B: Cold Cereal with Fresh Fruit
L: English Muffin Pizza with Ham, Mixed Vegetables

Saturday:
B: Toast, Scrambled Eggs, Fresh Fruit

Italian Chicken Pastina:
-1 c. pastina (small pasta...we use mini-penne)
-2 T. olive oil
-1/2 c. cubed chicken
-1/2 c. diced onion
-1 clove garlic, minced
-1 can petite-diced tomatoes, with juice
-1 c. mozzarella
-1/4 c. fresh flat-leaf parsley
-salt
-pepper
-1/4 c. bread crumbs
-1/4 c. parmesan
-1 T. butter
Preheat oven to 400. Cook and drain pasta. Meanwhile, heat oil in a medium saute pan over medium heat. Add chicken and cook 3 minutes. Add onion, garlic (and we add mixed up salt). Cook until onion and chicken are cooked. Put chicken mix into bowl with cooked pasta. Add tomatoes, mozzarella, parsley, salt, and pepper. Combine. Place mix in square dish. Mix crumbs and parmesan. Sprinkle over top of pasta. Dot the top with butter. Bake about 30 minutes.
Pork Tenderloin Rub:
-1 T. salt
-2 T. olive oil
-4 cloves garlic, minced (or the kind that comes in the jar...not the dried kind)
-1 t. thyme
-1 t. basil
-1 t. rosemary
Mix together and rub all over pork tenderloin (how much you rub on will depend on your taste and how big the tenderloin is). Bake as directed on tenderloin package. Really good!
